Should you want sticks then one would first slice the biltong across the grain the length you want your sticks to be then down the grain into sticks.
For thin sliced and chunked biltong it's best to slice across the grain of the meat.

The Biltong Guillotine Chunker: Usually found the in kitchen or behind the bar in homes all around South Africa. This is the best way to chunk biltong at home.
The Hand Held Slicer: Also found in the home kitchen or behind the bar. It is used to slice thin slices of biltong.
The Industrial Electric Slicer: Found in butcheries all around South Africa. It is used to slice stin slices of biltong in bulk.
The Industrial Chunking Slicer: This slicer is used to slice biltong into large sticks before drying and can also be used to chunk biltong in bulk.
The Industrial Band saw: This can be used to chunk biltong. We have seen butchers use this however it's highly not recommended.
Heavy Industrial Biltong Slicer and Chunker: This is used for slicing or chunking biltong by the ton. This machine can slice or chunk several tons of biltong per day.
